Ingredients
The Rice
16
oz
riced cauliflower
1 bag (I get mine at Trader Joe’s)

cups
broccoli
florets
2
cups
sugar snap peas
sliced into thirds
1
whole
bell pepper
large, sliced into thin strips
1
cup
edamame
frozen (cooked and shelled)
1/2
cup
carrots
shredded
1/2
cup
corn
frozen
1
tsp
coconut
or olive – peanut oil
The Sauce
1
tsp
sesame oil
1/4
cup
tamari
1/2
cup
lime
juiced
2
tsp
ginger
grated
1
clove
garlic
crushed
1
pinch
sriracha
Instructions
Mix ingredients for sauce in a small bowl and set aside.
Heat oil in wok or large pan.
Add the broccoli and stir-fry 2-3 minutes.
Add the carrots and stir-fry 2-3 minutes.
Add the sugar snap peas and edamame and stir-fry 2-3 minutes.
Add the cauliflower and corn and stir-fry 2-3 minutes.
Add the sauce and bell peppers and stir-fry 2-3 minutes.
Serve right away topped with scrambled egg, green onion, and sesame seeds if you like.
