When my doctor told me no grains for 30 days, I may have had a mini panic attack. At this point, I had eliminated gluten, processed sugar, dairy, and alcohol. Now I couldn’t eat brown rice?? Give a girl a break! I took a deep breath and decided this was my marathon. I had been training for this for years and I could handle it… But then that little voice bubbled – “But, I love fried rice!” Really, I love Asian food, in general. It is my go to in a pinch. What the heck was I going to do? And then I met “riced” cauliflower. I was suspicious but open. I had to be. Seriously, guys, this was a game changer.
The next challenge was the sauce. I was surprised to learn how much sugar there can be in a good Asian sauce. I had to come up with something that would taste great but didn’t have sugar. Here is what I came up with. My take on grain-free fried “rice”. I was pleasantly surprised because this version requires less time than traditional fried rice since you don’t have to cook the rice in advance, bonus!! This could be a side dish or, if you add an egg, it could be the main meal.
